Description: Just recently, one of the most popular tourist destinations in the European periphery announced the end of its covid-19 restrictions. Of course, I'm talking about Iceland, and they are hoping to have a safe opening for eager and soul-weary travelers to visit and be revived. And one of the best places to visit, if you are a tourist there, is where we're headed for today. For this episode of "Fit to Eat," we reprise an earlier trip to Iceland to visit a magical place. But it is almost the very opposite of the representations of "magical" places on the "Game of Thrones." This is a place of calm, of refuge, of the pungent smell of tomatoes. It is called Friðheimar, and is a greenhouse, restaurant, horse stables... and home. I talk to owner and founder Knútur Rafn Ármann about the evolution of the place, the value of local food production and how to adapt to visitors' needs to feel connected to their food.
